Here is another easy Christmas cookie recipe. It’s done in no time and without coconut macaroons there really is something missing during Christmas. Enjoy them with a cup of coffee, after lunch or dinner or simply whenever you feel like having one.
Coconut Macaroons (yields 50 macaroons)
- 3 egg whites
- 210 g (7.4oz) confectioner’s sugar
- lemon peel and juice of one lemon
- 250g (8.8oz) coconut flakes
Beat egg whites to a very stiff foam, add sugar spoon by spoon, keep beating. Add a little lemon juice, gently fold in coconut flakes and lemon peel.
Grease baking sheet and preheat oven to 150C (300F). With two spoons put little heaps on the baking sheet. Bake for approx. 15 to 20minutes, they are perfect when they have just lightly browned tips, they should not get brown. Remove from baking sheet and let cool.
